ところで、一般的には、テーブルの上に七味唐辛子が置いてあり、わさびはそばに添えられてくるという店が多いが、長野市周辺の一部の店では、「まず塩で、希望でテーブルの七味を加えて」「薬味は、大根おろしと刻みネギのみで、わさびは、希望者のみに出してくれる」なんて店もあるほど。

長野のあるおそば屋さんは、こんなコメントをくれた。
「昔はワサビが高価だったので、七味唐辛子が薬味として広く使われていたとも聞くことがありますよ。また、温かいおそばに七味は当たり前ですが、冷たいつゆに七味を入れて食べると、そばの甘味が引き立って美味しいんですよ」

「信州人は何にでも七味唐辛子をかける」などと、ネタのように言われることもあるが、冷たいそばに七味は美味しい。本当にお勧めです。
